Duties and Responsibilities

• Ensure good housekeeping.
• Ensure that food safety and quality standards and practices are maintained.
• Set daily production targets in accordance with the overall production plan.
• Monitor and report performance on production target plan.
• Implement corrective actions on any deviations on the plan.
• Ensure compliance to health and safety.
• Record and submit payroll input information.
• Monitor work attendance.
• Manage employee leave programme.
• Maintain good employee relationships.
• Maintain discipline in the section.
• Ensure effective communication within section.

• Knowledge of thermometer, biro cutter, chain mesh and scales.

Duties and Responsibilities

• Maintain a high level of hygiene throughout the processing plant.
• Conduct daily housekeeping evaluation.
• Follow-up of corrective actions
• Identify issues related to facility start-up.
• Carry out instructions given by Management regarding quality, hygiene and food safety.
• Responsible to complete the condemned meat report.
• Maintain the Quality Control Program.
• Complete start-up requirement and documentation according to procedure.
• Check and identify processing defects.
• Responsible to complete the scale checklist.
• Check product presentation and product packing.
• Report workers not adhering to the required standards (Food Safety, Quality & Animal Welfare)
• Process birds in accordance with applicable animal welfare practices and standards.
• Responsible to identify and report farm and catching defects.
• Responsible for DOA monitoring.
• Check stunning and other requirements, including fixed mass and daily reject report.
• Complete the live bird checklist with every load.
• Responsible to check physical appearance of birds.
