    Head Chef

    Introduction:

    Nederburg in Paarl is looking to recruit a head chef for a new start-up, with a genuine passion for food and wine, who is excited by new challenges and can demonstrate an entrepreneurial spirit. The ideal candidate will be a dynamic individual; ready to roll-up his/her sleeves and hit the ground running in order to launch a new restaurant by mid-April.This role would require an ambitious individual capable of leading a team to develop and bring to life an innovative, Bistro-style daytime restaurant, to complement the historic and premium wine brand.

    With plenty to be getting on with, your main responsibilities will include:

    • Delivering food products of consistent high quality, following standard recipes and meeting special guest requests
    • Full management of monthly stock counts, food costs and budgeted GP’s.
    • Taking immediate corrective actions where necessary to ensure compliance with all quality standards, especially health & food safety practices and controls.
    • Managing and adhering to kitchen budgets and forecasts.
    • Recruiting, developing and leading a motivated and efficient team
    • Engaging with key stakeholders to ensure cross-functional effectiveness

    Inherent Requirements

    • Minimum 5 years experience as a Head Chef
    • Professional Cookery qualification
    • Proficiency in Microsoft applications

    Experience and skills

    • Developing and costing menus that offer the food needs, dietary requirements and expectations of guests, in line with the Estates vision.
    • Experienced in preparing annual plans including budgets and monitoring financial performance.
    • Experienced in selecting, motivating, guiding and leading operational team members.
    • Competent in developing, training and ensuring policies, processes and standards are implemented and applied across the kitchen and back of house.
    • Ability to monitor and ensure compliance with health, safety, security and other legal requirements across the kitchen.
    • Great collaborator and influencer on social Media
    • Agile and change-fit
